2 OZ ZACAPA RUM OR DARK RUM 1 OZ GINGER MINT PUREE .5 OZ FRESH LEMON JUICE RINSE OF ARAK

1.5 OZ CLUB SODA MINT SPRIG COLLINS GLASS OR HIGH BALL

1. RINSE GLASS WITH ARAK. 2. BUILD ALL INGREDIENTS EXCEPT SODA IN SHAKER TIN. 3. FILL SHAKER WITH ICE. 4. HARD SHAKE FOR 8 SECONDS. 5. ADD SODA TO SHAKER TIN BEFORE STAINING. 6. DOUBLE STRAIN OVER ICE IN HIGHBALL GLASS. 7. GARNISH WITH MINT SPRIG. Ginger Mint Syrup Mix 16 oz light agave (may substitute demerara sugar) with 16 oz water to make syrup mix. Add 1 cup picked mint leaves and 2 inch piece of peeled ginger. Add all ingredients to blender. Pour into container or bottle **Syrup will last for 2 days
